Make Dinner Straight from Your Pantry

Simply sautee a tortilla over your stove, then top it with corn and black beans! If you have fresh produce on hand, add some chopped onions and red peppers. If you’re feeling extra fancy, you can throw in additional toppings, like cheese, sour cream, avocados, and salsa. 

Three-Ingredient Mexican Rice

You’re only three ingredients away from a yummy bowl of Mexican rice. All you need is rice, enchilada sauce, and chicken broth. In total, it will only take you about 15 minutes to make. If you want to cut down on prep time, use instant rice. Once the rice is cooked, simply add a can of enchilada sauce and two cups of chicken broth. If you have tomatoes and onions, you can add them at the end. 

Spaghetti al Limone

The name sounds fancy, but really all this meal consists of is noodles, lemon juice, and olive oil. If you have milk or cream in the fridge, you can add that too, but it’s not essential. You’ll start by cooking the noodles (any noodles will do) according to the instructions. After you cook and drain them, add lemon juice, olive oil, salt, and pepper. Stir and enjoy!
