This Indian-inspired dish is perfect for a weeknight supper. Chole, also known as chickpea curry, can be made as spicy as you like it. Traditional recipes require hours of preparation and cooking, but a tasty version can be whipped up using canned garbanzo beans and tomatoes.

  • 1 Tablespoon oil
  • 1 Tablespoon curry powder
  • 2 crushed garlic toes
  • 1/2 finely chopped onion
  • 1 Tablespoon tomato paste
  • 1/2 finely chopped onion
  • 1 jalapeño pepper, seeded and finely chopped (optional)
  • 1 can crushed tomatoes
  • 2 cans garbanzo beans
  • salt, to taste
  • pinch of cinnamon

In a skillet, heat oil. Add curry powder and toast for 30 seconds. Add garlic, onion, and jalapeno pepper, if using. Sauté three to four minutes until onion is tender, being careful not to burn. Add tomato paste and mix well. Cook for about 2 minutes. Add crushed tomatoes and simmer for about 5 minutes. Stir in garbanzo beans, salt, and cinnamon. Continue simmering for about 10 minutes. Serve with rice, roti, or other bread.
